The Molak Corporation is a family owned and operated restaurant and entertainment group, established in 1975 and recognized for owning some of the hottest joints in Texas: Gruene Hall, the Gristmill and Josephine Street, to name a few. We have grown from two employees and one business to what you see today, 10+ businesses and over 600 employees between Gruene and San Antonio. We are still a small business at heart, and we pride ourselves on preserving historic Texas properties and offering a great culture for our employees.

A one of a kind, true Texas experience, the Gristmill facility was once home to a cotton gin (circa 1878) and is considered one of the most iconic dining spots in Texas for nearly half a century. The original Gristmill building was placed on the National Registry of Historic Places in 1975 and the Gristmill River Restaurant opened its doors in 1977. Our menu items are made from scratch daily, right down to the soups, sauces and dressings. With its exceptional, tried-and-true menu, multi-level patios and 7 indoor dining rooms, the Gristmill is a quintessential spot that celebrates the regionality that makes Texas so special.

What we are looking for
The Kitchen Manager will be responsible for the entire BOH operations to ensure the team consistently produces quality food in a timely fashion in accordance with our brand standards. This position will be the force behind our food quality standards.

- Maintains consistent food quality by staying true to our recipes and ensures minimal food waste
- Manages food equipment and sanitation processes and adheres to state and local food and health guidelines
- Hiring and leading the BOH staff and coaching employees on consistency, quality, technique, and skills
- Training BOH staff on equipment maintenance and cleaning procedures
- Directing productivity to monitor and maintain efficient and effective food item ticket times
Minimum Qualifications:
- 3+ years in a high-volume kitchen - preferably in a scratch kitchen
- Previous management experience with a proven track record of inspiring and developing BOH teams to achieve operational goals
- Ability to be on your feet for 8+ hours a day
- Valid Food Manager Certification
- Working knowledge of all federal, state, and local laws as it pertains to the restaurant industry
- An effective leader with the capacity to maintain control in high-pressure situations
- Ability to lift up to 50 pounds and over 50pounds with assistance
